Easy Pinterest Recipes

I have been trying out new recipes that I have found on Pinterest and wanted to share my recent favorites.  Both are SUPER easy and absolutely delish!  

Roasted Red Pepper & Sweet Potato Soup

Ingredients:

2 large sweet potatoes, peeled and cubed (about 6 cups)

One 14 oz. jar of roasted red peppers in water (drained)

One 14 oz can of coconut milk

One cup of chicken stock

1 small yellow onion – largely diced

2 cloves of garlic

½ tsp black pepper

½ tsp red pepper flakes

How to Make:

1.  Put everything in your crock pot

2.  Let it cook on low for 4-6 hours

3.  Blend it

Blueberry, Kale, & Quinoa Salad

Ingredients:

2 cups of cook quinoa, cooled

1 cup blueberries

1 ½ cup shredded kale

¾ cup crumbled feta

½ cup sliced almonds

3 tablespoons lemon juice

3 tablespoons olive oil

Salt & Pepper

How to Make it:

1.  In a large bowl, combine quinoa, blueberries, kale, feta, and almonds.  Mix until combined

2.  Add lemon juice & olive oil until fully coated

3.  Season with salt and pepper

Mint Chocolate Chip Frozen Yogurt

Ingredients:

Chobani vanilla chocolate chunk greek yogurt

Peppermint extract

Green food coloring

How to Make:

1.  Put 1/8 tsp of peppermint extract into yogurt

2.  Add a drop of green food coloring

3.  Freeze for about 4 hours
