texas caviar

[one of my fav apps (and easiest to make) is texas caviar.  it includes all fresh ingredients and is one of those things that tastes better after it’s been sitting overnight.  there are a ton of recipes online and one of my parent’s friends gave me a great one too!  below is a little modified version (based off of what was already in my cabinets/fridge).]

[great thing to make the night before and bring to a party!  I promise it will be a crowd pleaser.]

[cut up some peppers.  I chopped red and green but wish I would have included an orange pepper as well.]

[can of black eyed peas. rinsed and drained.]

[can of black beans.  rinsed and drained.]

[can of corn.  rinsed and drained].

[chopped red onion]

[chopped cilantro]

[mix in an 8oz bottle of zesty italian dressing.]

[serve with chips (as a salsa) or add as a side item to a taco bar.]
